Lemony prawn and chorizo rice


A delicious and easy take on a paella style dish. 

Serves 3

  • 1 tbsp olive oil
  • 1 sliced onion
  • 2 sliced red peppers
  • 70g thinly sliced chorizo
  • 2 crushed garlic cloves
  • 1 tsp Very lazy Red chillies
  • 1/2 tsp turmeric
  • 250g long grain rice
  • 150g cooked prawns
  • 100g frozen peas
  • zest and juice of 1 lemon

Heat the oil in a shallow pan and fry the peppers, onions, chorizo, garlic and chilli for a few minutes on a high heat. Add the turmeric, rice and 500ml of boiling water. Bring to the boil, cover and simmer for 12 minutes. Uncover, stir and toss in the peas and prawns. Cook for a further minute or, if the rice is slightly under cooked, add some more water and reduce for a further few minutes. Stir in the lemon zest and juice and serve.
