Harissa chicken

Harissa is a Tunisian hot chilli sauce that is used in a lot of recipes. It  goes really well all meats, especially chicken.

Serves 4

  • 300g cherry tomatoes, halved
  • 1 onion, chopped
  • 400g can chickpeas, drained
  • Small bunch of parsley, roughly chopped
  • Juice of 1 lemon
  • 4 chicken breasts, halved lengthways
  • 2 tbsp harissa

Mix the tomatoes, onion, chickpeas, lemon and parsley together in a bowl and set aside.

Coat the chicken in harissa and fry for 3-4 mins each side. Divide the salad between 4 plates and place two pieces of chicken on top. Serve with warmed pitta bread and a dollop of natural yogurt.

    Leftovers would make a great salad with the chicken shredded and mixed in too!
