Sorry to all my spice-loving followers for my absence. I have recently moved so everything has been a bit up in the air the past few weeks but I am back now with another spicy recipe.
This recipe is easy, quick and uses very few ingredients. Passata is a sauce I’ve recently discovered. It is very similar to tomato purée because it basically is tomato purée, the only difference being the tomatoes are sieved and not cooked before they are packaged.
Spicy chorizo passata and spaghetti
- 250g spaghetti
- 75g sliced spicy chorizo
- 2 garlic cloves, peeled and finely chopped
- 1/2 tsp dried chilli flakes
- 500ml passata
Cook the spaghetti according to the packet instructions. In another saucepan, heat a tablespoon of olive oil in a pan and fry the chorizo for two minutes until it just begins to go crispy. Remove and keep on a plate to one side. In the left over chorizo oil fry the garlic and chilli flakes for 20 seconds and then add the passata. Cook the sauce for five minutes, stirring. Drain the spaghetti and divide between three bowl. Stir the chorizo into the sauce and then pour on top of the spaghetti. Serve straight away.
