Chilli roast potato salad

Probably not the healthiest of salads but with the chilly weather outside this salad will definitely warm you up.

Glass of water needed

Serves 2

  • 4 tbsp vegetable oil
  • 500g new potatoes, diced
  • Leek, sliced
  • Red pepper, sliced
  • Green pepper, sliced
  • 2 garlic cloves, crushed
  • Red chilli, chopped
  • 100g smoked sausage, sliced

Preheat oven to 200C and heat the oil in a roasting tin for 5 minutes. Add potatoes, season and toss in the oil. Cook for 15 minutes. Add the leek, peppers, garlic and chilli, stir and cook for 30 minutes. Add the sausage slices and cook for a further 10 minutes. Serve.
