Cold-curing curry bean soup

 

Sorry for my slight delay in posting. As soon as I got back from my little holiday I came down with a nasty cold and was living off soup for a few days. Luckily I had this recipe to hand.

Glass of water needed

Serves 2

  • 1tbsp vegetable oil
  • 1 onion, chopped
  • 2 tsp hot curry powder
  • 1 tbsp tomato purée
  • 400g can baked beans
  • 500ml vegetable stock

Heat the oil in a saucepan and fry the onion until soft. Stir in the curry powder and purée and fry for a further minute. Add the baked beans and stock, stir well and bring to the boil. Simmer for 15 minutes.

Season to taste and serve with bread and butter.
