Pesto and pasta is one of my all time favourite quick meals. Pesto usually includes cheese and nuts but this recipe is different. Its main ingredients are chilli, broccoli and anchovies.
- 300g broccoli
- 200g spaghetti
- 50g can anchovy fillets
- 1 garlic clove, crushed
- 1tsp of Very Lazy Easy Chilli
Cook the pasta according to the instructions. Boil the broccoli in a saucepan for 5 minutes.
Fry the anchovies in a frying pan over a low heat. Mash with a wooden spoon until they have disintegrated. Add the garlic and chilli and fry for a further minute. Drain the broccoli and add to the pan. Stir whilst cooking for a few minutes. All the ingredients should come together to form a paste.
Drain the pasta and add this to broccoli mix. Stir well and serve.
