Corn on the cobs with spicy butter

Corn on the cob as a child was about the only way my mum could get me to eat vegetables, but obviously only if the cob was smothered in butter. Now not only is there butter, there is chilli!

Glass of water needed

Serves 2

  • 50g butter
  • 1/2 red chilli, deseeded and finely chopped
  • 1 tsp grated lime zest
  • 1 tsp lime juice
  • 1 tsp chopped coriander
  • A drop of vegetable oil
  • 2 corn on the cobs

Mix all the ingredients together, apart from the cobs. Roll out into a sausage shape and wrap in cling film. Chill in the fridge.

Meanwhile prepare the cobs. Remove any white threads and place in a big saucepan filled with water. Boil for 10 minutes.

Drain the cobs. Cut the butter and serve on top.
