Chilli beef nachos for 2


This one is for all the university students enjoying their fresher week or first week of lessons. The perfect sharer.

Glass of water needed

Serves 2

  • 1 tsp vegetable oil
  • 200g beef mince
  • 1 tsp tomato purée
  • 150g chopped tomatoes
  • 1tsp chilli powder
  • 1 red bell pepper, chopped
  • 100g chilli flavoured tortilla chips
  • 1 tbsp sliced jalapeños
  • 50g grated spicy cheese

Preheat the oven to 180C. Heat the oil in a pan and brown the mince. Stir in the purée, chopped tomatoes, chilli powder and pepper and simmer for five minutes.

Layer the tortilla chips, mince and jalapeños in an ovenproof dish. Sprinkle over the cheese. Bake in the oven for 10 minutes. Serve with salsa and soured cream
