Spicy bean wraps

Serves 2

  • 1tbsp vegetable oil
  • 1 red onion, sliced
  • 1 garlic clove, finely chopped
  • 1 stick of celery, sliced
  • 11/2 red peppers
  • 200g chopped tomatoes
  • 1 tsp chilli powder
  • 1/2 tsp ground cumin
  • 400g mixed beans, rinsed
  • 6 tortilla wraps
  • Soured cream to serve

Heat the oil in a frying pan and cook the onion, celery and garlic until soft. Remove and put to one side. Add the red peppers and fry until soft.

Return the onion, celery and garlic to the pan and add the chopped tomatoes, chilli powder, cumin and beans. Mix well and simmer for 5 minutes.

Serve the tortillas warm with soured cream and the bean filling.
