Chilli ribs


My one bit of advice for this dish is buy good ribs. Don’t be cheap. I bought cheap ribs and although the sauce is amazing it was let down by the poor quality of meat.

Serves 2


  • 6 ribs

For the rub

  • 2 tsp cumin
  • 1/2 tsp paprika
  • 2 tsp coriander
  • 1 tsp oregano
  • 2 tsp brown sugar
  • Zest of half a lime

BBQ sauce

  • 2 tsp olive oil
  • 1 tsp chopped garlic
  • 1 tbsp tomato puree
  • 2 tbsp brown sugar
  • 1 tbsp red wine vinegar
  • 1 tsp chipotle paste
  • Juice of half a lime

Mix the rub ingredients together and then rub into the meat. Leave in the fridge over night.


Make the sauce by heating the oil in a small saucepan. Soften the garlic for 1 minute and then stir in the rest of the ingredients plus a tablespoon of water. When the sugar has dissolved remove from the heat.

Preheat oven to 160C. Place all the ribs in a roasting tin and pour in 50ml of hot water. Cover tightly with foil and cook for 2 hours.

Heat the grill. Put the ribs under it for 5 minutes on each side. Brush with some of the sauce and grill for another minute. Serve with the rest of the sauce, sour cream and couscous.
