Meatball curry


First recipe of 2015! 


Serves 2

  • 6 lamb or beef meatballs
  • 2 tbsp curry paste (I used tikka paste)
  • 200g can of coconut milk
  • 200g baby new potatoes
  • 100g mixed veg like mangetout and baby corn
  • Rice to serve

Brown the meatballs in a large saucepan. Stir in the curry paste, coconut milk and a quarter of a can of water. Bring to a simmer.


Add the potatoes and cover. Cook for 20 minutes. Add the vegetables and cook uncovered for 5 minutes. Season and serve with the rice.
