First recipe of 2015!
- 6 lamb or beef meatballs
- 2 tbsp curry paste (I used tikka paste)
- 200g can of coconut milk
- 200g baby new potatoes
- 100g mixed veg like mangetout and baby corn
- Rice to serve
Brown the meatballs in a large saucepan. Stir in the curry paste, coconut milk and a quarter of a can of water. Bring to a simmer.
Add the potatoes and cover. Cook for 20 minutes. Add the vegetables and cook uncovered for 5 minutes. Season and serve with the rice.
