- 2 chicken breasts
- 1 red pepper, diced
- 1 garlic clove, finely chopped
- Fresh parsley, chopped
- 1 tbsp olive oil
- New potatoes and salad to serve
Preheat oven to 200C. Put the chicken breasts in a roasting tin and season. Mix the red pepper, garlic and parsley together in a bowl with the oil and season. Spread over the chicken.
Spoon a tablespoon of water into the tin and roast the chicken for 25 minutes. Serve with new potatoes and salad.
