An easy health snack for parties or just when you’re feeling peckish.
- Mini peppers (as many as you like, each pepper makes two)
- 120g cream cheese
- 1/4 onion, finely chopped
- 1 teaspoon chopped garlic
- 1 teaspoon chilli flakes
- 1/2 shredded mozzarella cheese
- Pinch of salt
Preheat your oven to 180C. Cut the peppers in half and remove all the seeds. Combine all the other ingredients apart from the mozzarella in a bowl until smooth.
Place all the pepper halves on a baking tray and scoop a spoonful into each one. Place the shredded mozzarella on top.
Bake for 15 minutes (keep an eye on them) and serve warm.
