Healthy, easy spicy chicken stir-fry

I’m away for the next week so here’s a quick and simple recipe that came in handy late one evening. 

Serves 2

  • 1tbsp coconut oil
  • 1 garlic clove, chopped
  • 3 inch ginger, cut into long slivers
  • 1 red chilli, deseeded and chopped
  • 1 red onion, chopped
  • 200g chicken breast, sliced
  • 60g asparagus, sliced
  • 100g mangetout
  • 2tbsp soy sauce
  • 1tsp dried coriander

Heat the oil in a wok and fry the garlic, ginger, chilli and onion. Fry until the onion is soft – about five minutes.

Add the chicken and cook until almost cooked through. Add the vegetables and stir-fry for 5 minutes.

Add the soy sauce and coriander and stir-fry for a further minute. Serve.
