Spicy quinoa and prawns


Serves 2

  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 clove garlic, finely chopped
  • 1 tsp of hot sauce (I used Blazin’ Saddle)
  • 190g uncooked quinoa
  • 500ml vegetable stock
  • 225g raw prawns
  • 2 tbsp lemon juice


Heat the oil in a large saucepan and add the onion, 1 clove of chopped garlic and cook until soft. Add the quinoa and 1/2 tsp of your chosen hot sauce. Stir and add the vegetable stock.


Bring to a boil, reduce, cover and simmer for 20 minutes. While the quinoa is cooking, cook the prawns.


Heat 1/2 tbsp of oil in a frying pan or wok and add the prawns. Add the rest of the hot sauce, stir and cook until opaque.

Stir in the rest of the garlic and mix the quinoa and prawns together. Stir in the lemon juice and serve whilst hot.
