SPICY BREKKIE ALERT!
A busy weekend needs a good start to the day. This certainly did the job.
- Makes two pieces of toast
- 2 slices of brown bread
- 2 tablespoon ricotta
- 1 tablespoon of chopped fresh herbs (basil or parsley)
- 1 tablespoon lemon juice
- Salt and pepper
- 1 jalapeno, deseeded and chopped
- 5 cherry tomatoes, chopped in half
- 1 tablespoon olive oil
Mix the ricotta, lemon juice and chopped herbs in a bowl. Season and spread on the toast.
Sprinkle the tomato halves and jalapeno on top of the toast and drizzle over the olive oil.
Under a preheated grill, cook the toast for about five to 10 minutes (when the jalapenos start to brown). Serve.
