Here’s another easy and healthy spicy lunch recipe.
- 1/4 cauliflower, cut into florets
- 1 tbsp chilli oil
- 40g raw quinoa (to save time you can use ready to eat quinoa as well)
- 1 small red onion, finely chopped
- Large handful of spinach
- 1 tbsp vegetable oil
- 1 tbsp tahini paste
- Juice of 1/4 lemon
- 1/4 tsp turmeric
- 1/4 tsp cumin
- 1/4 tsp cayenne paste
Preheat the oven to 180C. In an ovenproof dish, toss the cauliflower florets with the tablespoon of chilli oil, sprinkle over some salt and roast for 30 minutes. If using raw quinoa, cook to the packet instructions.
Heat a tablespoon of vegetable oil and fry the onion until translucent. Add the spinach and leave to wilt.
Make the dressing by combining all the ingredients in a bowl to form a thick paste. Add a tablespoon of cold water to soften the paste and season to taste.
Add the quinoa to the spinach and onion and stir well. Heat through just to get rid of any excess water. Stir in the roasted cauliflower.
Put the mixture into a bowl and you can either stir through the dressing or just dollop on top. Eat straight away.
