Spicy pumpkin wedges

Happy Halloween weekend!

I’m just getting ready to put my costume on for tonight’s party, but fancied a quick snack beforehand. Luckily there’s always some leftover pumpkin in the fridge around this time of year so I’ve cooked up some quick and easy spicy wedges.

  • 1/2 small pumpkin
  • 2tbsp chilli oil
  • 1/2tsp dried coriander
  • 1/2tsp oregano
  • 1/2tsp paprika
  • 1/2tsp turmeric
  • 1/2tsp cumin
  • 1/2tsp salt

Preheat oven to 210C. Chop all the skin off the pumpkin and remove the seeds. Chop into thick chips or wedges.

Mix all the other ingredients together in a bowl. Should form a watery paste.

Put the pumpkin in an ovenproof dish and coat with the paste. Cook for 30 minutes, turning over halfway through.

Serve with mayonnaise.
