Creamy curried leek and potato soup

Feel like the  cold weather is getting to you? Soup is the answer!

Serves 4

  • 1tbsp vegatable oil
  • 1 large leek. sliced
  • 4 shallots, sliced
  • 1 baking potato, peeled and cubed
  • 1tbsp medium/hot curry power
  • 1/2tsp cayenne pepper
  • 1.2L veg stock
  • 150ml creme fraiche
  • Seasoning

Heat the oil in a large saucepan and cook the leek, shallots and potato until soft.


Add the curry powder and cayenne pepper and stir in the veg stock. Season.


Bring to the boil and simmer for 10 minutes. Stir in the creme fraiche and then blend with a hand blender until smooth. Season to taste and serve.
