Chilli, tomato and bacon soup

It feels so good to chill out with a nice bowl of soup when everything else feels manic right now.

Serves 4

  • 2tbsp rapeseed oil
  • 1 red onion, chopped
  • 2 garlic cloves, chopped
  • 1 red chilli, deseeded and chopped
  • 1 tsp ground cumin
  • 1 tsp dried coriander
  • 1tbsp tomato puree
  • 4 slices of bacon, chopped
  • 500g chopped fresh tomatoes
  • 500ml veg stock

Cut a cross into each tomato and put them in a bowl. Cover with boiling hot water.

In a large saucepan heat half the oil and cook the onion, garlic, chilli, cumin, coriander and tomato puree for 5 minutes or until soft. Remove from the pan.

Heat the rest of the oil and fry the bacon until cooked. Then add the chilli mixture back into the pan.

Remove the skin and chop the tomatoes. Add to the pan with the veg stock and simmer for 20 minutes.

Blend the mixture for about 10 seconds in a blender then return to the pan, heat through and serve.
