I had some left over chorizo and half a pot of Creative Cook Mediterranean Paella Paste so I thought I’d try out a cheat recipe inspired from Good Food’s April issue. It’s missing a few typical paella ingredients but it’s super simple and super tasty. The paste has a smoky flavour with paprika, garlic & saffron. If, like me, you like to taste the sauce on its own, then you may find the flavour unusual, but mixed with the right ingredients it is spot on!
- 2 tsp olive oil
- 100g jar of Creative Cook Mediterranean Paella Paste
- 150g basmati rice
- 150g frozen peas
- 90g chorizo slices, torn
Heat the oil in a saucepan and fry the paste for two minutes. Then add the rice and mix well.
After two minutes, add 400ml of boiling water and simmer for 15 minutes. If it goes dry add more water. Five minutes before the end tip in the peas.
Once cooked stir through the torn chorizo slices and heat through. Serve!
